Vegetable Pulov

Ingredients
- Basmati Rice - 2 cups
- Beans chopped - 1/2 cup
- carrot-1/2 cup
- Cashewnut (optional)- 10
- Cilantro/Coriander leaves-4 sprigs
- curd(yourt)- 1tsp
- Fresh ginger paste- 1 tsp
- cloves-2, bay leaf-1 , cinnomon - 1
- cardamom - 1
- javenthi -1
- star anise-1
- Garlic paste - 1 tsp
- Green Chillies -4
- Green Peas- 1/2 cup
- Mint- half bunch
- oil as required
- Onion - 1
- potato- 1
- Salt to taste
Preparation method
- Soak rice for about 20 minutes
- In a heavy bottomed pan, add ghee , add bay leaf, cinnomon, cloves, green cardomom, javenthri,star anise ans saute it for 30 seconds .
- add the finally chopped onion, saute for for few minutes.,add ginger and garlic paste and saute it , then add green chiilies, chopped cilantro, and mint leaves, stir for a while
- Add the vegetables(potato,carrot, green peas) one by one & salt & allow them to cook until they are soft adding little amount of water and yogurt .
- once the vegetables are half cooked, transfer the contents to the rice cooker, add the soaked basmathi rice and needed water . then switch on the rice cooker .
- once itz done. Garnish with roasted cahewnuts & mint leaves.
